When you mentioned "Good Egg", it brought back memories of a saying I used to say to my brothers when we were all younger....You're a good egg, too bad it's cracked! hehe
You were asking about the sap that comes out of a maple tree to make syrup...the sap is 2% sugar and 98% water so when you drink it straight from the bucket, it tastes like water with a mild sweet taste to it. It must be boiled down to syrup by evaporating the water content that's in it. It takes 40 gallons of sap to make 1 gallon of syrup so you can imagine all the sap that has to be collected throughout the season!! For perfect flowing conditions, it must be below freezing temps at night and above freezing temps with sun in the daytime. It really is quite the process to watch start to finish:-) xoxo
